Cocoa Coconut Pork Chop Chili

SO THERE WE WERE…..driving to Ohio for my cousin Kelly’s wedding. We asked ourselves, “What are the common excuses that others use to not try a gluten and sugar free diet?”

I often hear “Then, what do you eat?” My translation of that question is that it sounds hard and impossible, and they have instantly set themselves up for an uphill battle. It is easier now than ever to make this change.

This thing called the internet makes it so easy to find tasty and delicious recipes. We had a delicious Cocoa-Coconut Pork Chop Chili (say that 3 times fast) on Monday evening and it was delicious. Click the picture to link to the recipe!

Just because we are following a stricter diet doesn’t mean we can’t deviate from it time to time. When it comes to deviation, remember: All things in moderation.

I ate the fried chicken, BBQ pulled pork, corn, noodles, mashed potatoes and gravy, and coleslaw. It was gosh darn delicious and I’d do it all over again! I did stay away from the cake, the cookie trays (sorry Grandma your 7-layer bars did look tasty), and even the ice cream machine!

It didn’t change how much fun we had celebrating the marriage of two wonderful people. Congratulations Kelly and Ross!

This week we are stopping the bentonite and psyllium, continuing the digestive enzymes, and now incorporating a probiotic for gut support. We are continuing to feel great and full of energy!
